Finely chop the onion and saute in the olive oil.

Wash and drain the wheat and add to the onions, fry for a few minutes and add one third of the warmed chicken stock.

Add the salt and pepper pepper, stir and simmer gently with the lid on, until all of the liquid has been absorbed by the wheat.

Add another one third of the chicken stock along with half of the butter and simmer gently until all of the liquid has been absorbed.

Add the remaining stock and simmer gently until all of the liquid has been absorbed.

Meanwhile clean and slice the mushrooms. 

In a another pan, melt the remaining butter and cook the mushrooms until they are fried and there is no water in the pan.

Add the mushrooms to the cooked wheat, taste, and add salt and pepper if necessary. Stir gently and serve.

Wheat can be replaced with barley and you can use whatever variety of mushrooms available.
