Tuna Pasta Salad

Put the pasta shapes into a large pot and add cold water to come 10cm above the level of the pasta. Add some salt to the pot and stir well. Put the pot onto the cooktop and turn the heat to high. Put the lid on the pot and let the water come to the boil. Open the lid often and stir the pasta to stop it from sticking together.

Once the water is boiling, turn the heat down and open the lid so that it is at an angle and the steam can escape. Maintain a temperature so that the pasta is at a rolling boil but not boiling over. Stir often.

Meanwhile, finely chop the onion and gently fry it in a pan with the olive oil until it is softened and cooked.

Drain the corn and the tuna.

Chop the sundried tomatoes and the olives into pieces.

When the onion is cooked, add the salt and Aleppo pepper. Stir through and remove the pan from the heat.

When the pasta is cooked but still firm, strain the water out and put it into a large bowl.

Immediatly add the cooked onions and stir through.

Add the tomatoes, olives and tuna and stir this through. Break up the tuna if the pieces are too big.

Lastly add the dried mint, stir in well and taste to see if any more salt is needed.

Serve warm or cold.
