Use a hand blender or a potato masher to crush the tomato if you have used diced tomato instead of pulp.

Put all of the ingredients except the vinegar into a small pot and stir together.

Heat up the pot until the tomato mixture starts to simmer.

Turn the heat down but maintain the simmer for 15 minutes.

Add the vinegar and keep simmering until the sauce has reduced and it is thick and not watery.

Taste, and adjust the seasoning if necessary but don't add too much at once.

More Aleppo Pepper can be added if you like it hot and fresh grated tomatoes can also be used instead of canned but the cooking time will be more.
