Put the kettle on to boil.

Finely chop the onion.

Heat the oil in a pot, preferably a wide and low pot if you have one.

Add the chopped onion to the pot and cook over a medium heat, stirring occasionally, until the onion has softened.

Peel the tomatoes and chop into small pieces. Add to the pot of onions and stir in.

Meanwhile, scrape the skin off the zucchini with a small knife. Wash, then cut in half lengthwise. Then cut the zucchini into slices 0.5cm thick.

Peel and thinly slice the garlic.

Wash the rice and drain.

Add the garlic and the rice to the pot with the onions and tomatoes.

Place the sliced zucchini on top. Do not stir.

Put the required amount of hot water into a cup or bowl and add the tomato paste, salt and pepper. Stir and pour this over the vegetables.

Put the lid on the pot and simmer over a medium to low heat for 20 minutes. 

Leave it to rest and serve hot or at room temperature with a sprinkling of your desired chopped herb.
