Sautéed Carrot & Yogurt Salad

Instructions

Peel and grate the carrots.

Heat the olive oil in a pan and add the grated carrots, maintain a medium heat and sauté the carrots until softened. Approximately 15 - 20 minutes.

Meanwhile crush the garlic and add to the yogurt and mix well with a little salt.

When the carrots are cooked and have cooled down, add the yogurt mixture and mix in well.

Taste and adjust seasoning accordingly.

Place on a serving plate and decorate with Paprika flakes.

A different flavour to the boiled version and both delicious. Be sure to use good thick yogurt and don't be tempted to use pre-crushed garlic from a jar or the delicate flavour of the carrots will be lost.
