Russian Salad

Instructions

Peel the carrots and cut into pea sized cubes.

Put into a small pot with the peas and some salted water and bring to a simmer.

Simmer until the carrots are cooked, by then the peas should also be cooked.

Once the carrots and peas are cooked, drain very well and set aside to cool.

Chop the gherkins into small pieces roughly the size of the peas and put them into a bowl along with the cooked peas and carrots.

Add the mayonnaise and chopped dill and stir to combine. 

Chill and serve with other Meze dishes or with bread. This is also used as a sandwich filling with cold meat.

It is also popular to add 1 or 2 cooked, chopped potatoes to the salad and there are many variations but this is the way that we like to prepare it.
