Potatoes with Eggs

Instructions

Peel and wash the potatoes. Cut them into small cubes, a little smaller than 1 cm.

Heat the oil in a pan over a medium heat.

When the oil is hot, add the potato cubes. Fry the potatoes stirring frequently until they are cooked and golden in colour. 

Break the eggs into a cup or a small bowl and beat gently using a fork.

When the potatoes are cooked, turn the heat down to low and add the salt, peppers and herbs. Stir for half a minute.

Add the beaten eggs and stir in. Stir gently until the eggs are cooked.

Serve hot or at room temperature.

Can be served any time as a main or a side.
