Mint Cucumber Ayran

Instructions

Roughly cut up the cucumber, you can peel it if you like if the skin is bitter but I use Lebanese cucumbers and this is not necessary. Just give it a good wash.

Put the cucumber, mint, yogurt, water and a little salt into a blender.

Blend well until smooth. 

Check the taste and consistency and add more salt if necessary and blend again.

The consistency should be approxamately as thick as a milkshake.

Pour over ice in a glass and serve cold.

This is an Afgan stye of Ayran and it is very refreshing and hydrating on a hot day.
