Lentil Soup

Instructions

Wash the lentils very well and put them into a pot with the water.

Simmer gently until the lentils are cooked and very soft.

Put a seive over a medium to large bowl and put in some of the cooked lentils, along with the cooking water.

Use the back of a wooden spoon to press the lentils through the seive.

Continue doing this until all of the cooked lentils have been passed through. This will be your lentil puree.

Melt the butter in the now empty pot and cook the cumin for a minute.

Add the flour and stir in. Cook together for 2 - 3 minutes.

Slowly add the lentil puree stirring all the time to avoid lumps.

Once all the puree is incorporated, add the salt and simmer the soup for 5 minutes to be sure that the flour is cooked. 

If you think the soup is too thick, add a little hot water. Taste and adjust the seasoning if necessary.

Serve with a squeeze of lemon and a sprinkle of paprika flakes.

This soup is very light and can be served as an appetiser.
