Cheese Filled Biscuits

Instructions

Melt the butter and let it cool down a bit.

Mix together one egg, yogurt, olive oil and the melted butter.

Add a pinch of salt and the flour.

Mix together with a wooden spoon. 

Once all the ingredients are incorporated take a small piece of the dough and press it together. It should be soft and not crumbly and hold together well. (In Turkey it is described as having the consistency of your earlobe).

Let the dough rest while you prepare the filling.

Mix the cheese with the chopped parsley, crumbling with your fingers.

Take a piece of dough roughly the size of a golf ball and press it into a ball shape. Place the ball in the palm of your hand and press flat to make a disk to a diameter of approximately 6 cm. 

Fill the dough with a teaspoon of the cheese and parsley mixture and close the dough around it. Flatten the biscuit slightly and place it onto a baking tray. 

Brush the biscuits with egg yolk and sprinkle seeds on top.

Bake at 160 C for 20 -30 minutes until golden.

Makes about 25.

Best served fresh with tea.
