Bulgur & Green Lentil Pilav

Instructions

Wash the lentils and place in a pot with the Aleppo pepper and the first measure of water.

Cook until most of the water has been absorbed.

Peel the onions and cut in half, slice thinly.

Heat the oil in a pot and gently cook the onions until soft, add the tomato paste and cook for a few more minutes.

Add the second measure of water (hot), the salt and pepper and bring to the boil.

Add the bulgur and simmer with the lid on for 5 minutes.

Add the lentils and liquid, put the lid back on and simmer until all of the liquid has been absorbed.

Turn the heat off but leave the pot on the stove.

Place a clean tea towel between the lid and the pot. Leave to rest for 10-20 minutes.

Just before service give the meal a gentle stir with a wooden spoon to aerate it.

Serve with yogurt.
