Beetroot & Tahini Salad

Instructions

Boil the beetroot until they are soft. 

Drain and cool.

Once the beetroot are cool, peel the skin off. It should just slide off.

Grate the beetroot into a bowl and then put it into a seive. Let the excess liquid drain off.

Put the drained beetroot into the clean bowl and add the lemon juice, tahini and salt. Stir it all together until it is well mixed.

Add the yogurt and mix.

Place into a serving bowl or onto a plate and serve.
