Baked Prawns with Mushrooms

Instructions

Peel the prawns, if they are large then cut them into 1.5 cm pieces.

Heat the oven to 180 C.

Finely chop the onion and also finely chop the garlic.

Heat the oil in a pan and gently cook the onion and garlic until the onion is soft. Have the heat between medium to low so that the onion doesn't burn.

Meanwhile thinly slice the capsucums and cut in half. Add the sliced capsicums to the cooked onions and garlic and stir in. Cook for 2 minutes.

Wipe the mushrooms and slice thinly. Add to the pan. Stir.

Cut the tomatoes into small cubes and add these to the pan of vegetables.

Add the hot water, cover the pan with a lid and gently cook until the mushrooms and tomatoes are soft.

Stir in the prawns. Put the lid back on the pan and cook for 5 minutes.

Add the chopped parsley.

Divide the mixture into 4 earthenware or ovenproof bowls, place them onto a tray and then put them into the hot oven for 15 minutes.

Remove the tray from the oven and put grated cheese on top of each bowl.

Put them back into the hot oven and bake for a further 5 minutes or until the cheese is melted and golden.

Serve with a salad and some sourdough bread.
